Muffin Tin Monday - Independence Day!

I attempted to make a 4th of July themed muffin tin meal, as this meal was consumed yesterday on Independence Day, but my Little Miss Firecracker (or, rather Little Miss Impatient) was being a bit of a pain during lunch preparations. The joy of three-year-olds. ;-)

Front row: cucumber slices with hummus, cupcake (happy birthday, America!), star shaped cheddar cheese.

I was going to make her star-shaped panini sandwiches, like her big brother had in his Independence Day bento, but she had no desire to wait for that. So she ended up with the leftover edge bits from his cut-outs instead. The arrangements of scraps looks a bit like an explosion, yes? As in "bombs bursting in air"? ;-)

We made cupcakes for the 4th and the three big kids decorated them with whatever red, white and blue sprinkles they liked. I had four different dishes of Indepence Day sprinkles to choose from for their own custom cupcake creations. My little miss decided to encrust her cupcake completely by dunking it upside down in a sprinkle dish. It made for one very crunchy cupcake. I might have gagged a little watching her eat it.

We talked about making cupcakes yesterday and didn't get around to it. I love that you used the scraps. I never know what to do with them and end up eating them myself.

I love the fireworks panini! That's the sort of innovation/short-cuts we need in the lunch packing community. It's all about how you present it, right?

Casie & Andrew - the star shaped silicone cup is from Cost Plus World Market and the star shaped cutters I used here are from J-List, but Wilton makes some too. :)
