My oldest child is my second pickiest kid. He doesn't like sandwiches because he doesn't like bread (!!!), UNLESS it is toast or crunchy garlic bread. Enter the panini maker. He will happily eat a panini of garlic-y bread (drizzle of olive oil and sprinkle of garlic salt) with a thin layer of Italian cheese blend in the middle. I don't usually put these in his school lunches because it takes more time than I'm usually able to devote in the morning. Not only does it need to cook, but it needs to cool down before being packed so that it doesn't get soggy from trapped condensation in the box.
It sure looks pretty in the bento box though! I love the grill lines of the panini juxtaposed with the checkered apple. :) Carrots and Sunchips (garden salsa flavored- YUM!) make up the rest of his lunch.
